Does anyone know what SCSI options are available / compatible with the Mac PRO?

Nevermind. I found out that a company called ATTO has several cards that boast SCSI compatibility with the latest and greatest from Apple. =)

older scsi peripherals (scanners, external hard drives.... 1st gen. zip drives)

Very little. The main use for SCSI are really fast HDs. Other than that it's mainly legacy devices.

And even those are an edangered species, as not many are made anymore and the ones that are sell for rediculous prices.....

I convinced a close friend to switch to the Macintosh platform, the only holdover being an EPSON GT-10000+ large-scale scanner. A new scanner of the same size and caliber with USB/Firewire would cost between 2k and 3k, whereas a SCSI card and software would cost around $500.

He would have to use VueScan for printing as native drivers are not available for OSX, so while the solution is not pretty and native, he at least has a viable option. =)

SCSI still averages about double the sustained transfer rate of a comparable SATA drive.

SCSI is much faster, but few people would need it in a home/small office environment.

Alot of Systems Admins still prefer SCSI over SATA because it's a proven technology especially when it's mission critical and $$$/jobs are at risk =P

If you want to simply connect a scanner, how about getting a FireWire-SCSI/USB-SCSI adaptor? That should be plenty for a scanner.
I don't suffer from insanity, I enjoy every minute of it.
