I'm running a Dual 867 Powermac and love it so far but I'm thinking of adding another HD so that I can use it for all of my music for my itunes. Is this possible and is there any specific settings that I need to know to make this work?

It sure is. I'd recommend checking the drive compatibillity list over at XLR8YourMac first to make sure you won't run into problems.
When you get the new drive, you'll likely need to change the jumpers on it, it's no big deal.
