I noticed this recently, actually. Catsup and Mustard used to say "Keep refrigerated after opening" on the container. Recently (and I mean within the past year or so) they removed that from the container.

Either catsup could always be kept in a pantry and not refrigerated, or, they've started puting in some sort of preserve so it doesn't spoil. It's made of tomatoes, you know. (at least, it used to be.)

Well, it will keep longer in the fridge, but it certainly is sweet and acidic enough to not spoil within a few weeks.

Why don't you get a small bottle of ketchup for yourself that you leave out? Then when it's empty, fill it up from the Master Bottle in the fridge.

Ditto. Fridge it for longevity, too (I tend to buy the enormous wholesale bottles).

Most people don't keep soy sauce in the fridge, either, but there it keeps indefinitely, while it kind of grows stale, otherwise.

I feel your pain. When you go to restaurants and diners you don't get cold ketchup, why do people put ketchup in the fridge at home ? My girlfriend constantly used to put the ketchup in the fridge, and finally after telling her a million times, she has now been re-programmed, and she resists the urge to put ketchup in the fridge. I put certain mustards in the fridge, but then again, it says so on certain bottles, and mustard isn't ketchup afterall.

I don't use ketchup in McDonalds for this very reason. I just use sweet'n'sour instead.

Because it is a very acidic product, ketchup does not spoil easily. Once opened, in order to maintain the product's quality more effectively, we do suggest that ketchup (and any other processed food) be refrigerated after opening because refrigeration retards spoilage.

i must go through ketchup often enough that i've never encountered spoiled ketchup. i just don't want retarded ketchup.

This is one of my biggest pet peeves. I just can't stand to put cold ketchup, BBQ sauce, mustard, salsa, etc. on hot food. I usually don't keep it in the fridge because it keeps just fine at room temperature. But I can understand those who prefer to do so. I'm one to warm up the sauce in a microwave before putting it on my food though. I mean seriously ... when was the last time you went to a BBQ restaurant and they put cold sauce on your meat?

But a BBQ restaurant doesn't server BBQ only three or four times a month. They do it every few seconds. So the BBQ sauce isn't sitting out for weeks on end.

I do put opened salsa in the fridge. I just heat it up in the microwave before I put it on food. But ketchup and BBQ sauce ... I just toss them in the pantry. And I've never had them go bad.

Depends where you live I think. There are lots of things in my German fridge (esp. over summer) that I'd never kept in the fridge when I lived in Scotland. Ketchup for example. Also if your fridge is bigger than your cupboards, you'll end up with colder food.

Fridge for the ketsup and mustard. Definitely. The stuff that winds up on the outside lacks enough sweetness and vinegar to preserve itself. I spent a year in Honduras (up in the mountains) and found out the hard way that "no refrigeration needed" mustard needs either thorough cleaning immediately after use (hard to do without running water) or refrigeration (which I had).

I only put very high oil content all-natural peanut butter in the fridge. But I try to get drier PB when I buy the stuff (thanks Whole Foods!). Can't find Vegamite here, but we can get Nutella, and it's just too thick to use when it's cold.

I prefer it cold. Most items are meant to be refrigerated after opening.

When I find mine going dry, I add a bit of peanut oil and stir it up again. I use the oil for stir frying, so I have it anyway.

Restaurants put the ketchup in fridges overnight, and leave it out during the day when it's being used every few minutes. Duh.

Definitely fridge. It starts to taste funny when left in the cupboard for a while.

In other news, I once roomed with a family which kept their Cheez Whiz in the cupboard. That **** used to gross me right the hell out.
