I'd like to upgrade my 13" MacBook 2Ghz core duo to the new 13" 2.5Ghz MacBook Pro and wanted to know if there was any reason to wait?

Since you have a functional macbook--I think that's a reason to wait. Even though the line was just updated, it will be updated again, and again. You'll get more value out of your current computer if you wait and will truly have a more advanced computer when you do upgrade.

You're correct it's functional, but it's an early model macbook, seems to have its fan running constantly and I feel a bit foolish dealing with the limitations of an 80G hard drive these days. The ridiculously long battery life of the new model is also quite appealing since I work out of cafes most days.

Actually, I do have one question regarding the new 13". I know it's a unibody, but is there any way in the future I could upgrade the 500G hard drive to a SSD at some point without voiding the warranty? I can't really justify the additional cost at this point.

That's perfectly fine reasoning.
Just for the record, swapping the HDD on that 13" MB is a cinch. The MB was designed so pretty much any user can swap the HDD within five minutes using just a screwdriver and a coin.

And HDD are really cheap, too.
500 GB, 7200 rpm, $120 shipped
500 GB, 5400 rpm, $90 shipped
320 GB, 5400 rpm, $60 shipped

The harddrive is user-replaceable, just like that of your MacBook. You don't void the warranty if you replace the built-in harddrive with another harddrive or SSD.
YFI, my 15" first-gen ProBook does not have a user-replaceable harddrive, so I had to pay for the upgrade. Yes, I could have done it myself, but I would have voided Apple Care. I'm glad Apple has moved to user-replaceable parts across the line-up (with the exception of the battery?!).
