I was looking at the different AT&T plans.
The plans are setup with Night and Weekend minutes.
At what time does AT&T consider it "Night"?

9PM-6AM.
I believe there is an option, however, that you can add for an additional monthly cost that starts nights earlier. (Like, say, 6PM)

$8.99 for it to be 7AM-7PM.

I don't have an iPhone but I do have AT&T/Cingular. They are right. You have to pay extra to have nights start at 7pm.
Although if you know how much you talk with your current phone you can do the math and see if the leftover rollover minutes will cover any extra talk time. My family and I have so much rollover minutes that we talk as long as we want anytime of the day. That's the main reason why I stay with AT&T. Every month I pay for a set amount of minutes, I don't lose those minutes I paid for unlike other cell phone carriers.
