Can anyone explain to me why it is that in OSX when you type in your password correctly , you can still add as many additional characters to it and still log in properly?

Mac OS X only cares about the first 8 characters.

Then why can I type 50+ characters after a 5 character password and still login?

It probably uses the length of the password (n) to only compare the first n characters.
