On my apple key board I have a euro symbol on the number 2 key however when I press alt and shift I get ™ instead of euro.
How do I get the euro symbol?

You just press alt+2, not alt+shift+2.

you can also find where it lies by opening the keyboard viewer (in the system prefs, under international). You could have also been using a wrong keyboard layout and this way you can view where it is.
You can also get it from the character palette.

In this case it is really 'alt' because it is being used to give an alternative symbol
The one that stumped me at first was the # sign, which is nowhere to be seen on my (UK) keyboard. It would be easy enough for apple to have printed the key with £ # 3 - it is different to US keyboards anyway :/

Hi I just found this thread and thought I'd do a little guide for my wife how to get these 'special characters' - I usually like to illustrate with screen shots, how do I get a screen shot of the keyboard viewer with no modifier keys pressed?

You can use the 'Grab' application - found in Applications -> Utilities - and then use the option "Timed Screen"

Excellent, I am so used to using shift+ctrl+option+4 and its variants I was unaware of Grab's usefulness.
Thanks
