As far as running PC games with Bootcamp on MBP is 1 gig RAM sufficient or will 2 GB RAM make a big difference with no additional applications running?

Definitely - it's the same as with games on normal Windows PCs, since you're running in a native environment. The gain is especially important when you're using a laptop, since you want to avoid accessing the slower portable hard drive whenever possible while you're playing a game.
