Is there a way to configure my screen saver so that it will never start in specific applications but will start normally in the rest? For example, I never want the screen saver to kick in during video conferencing. I know I can use hot corners for this but I want something that automatically excludes an application so it's idiot-proof.

This seems like something that should be easy but I've searched and searched and can't find anything.

You can set a hot corner for "disable screensaver" in the Desktop & Screen Saver system pref.

Not exactly what you're looking for.
