For those running Leopard (10.5.5) on a G5 (Dual 2.0Ghz) can you tell me what the normal VM size/Page ins should be? These number seem a bit excessive to me.

voth, your page-outs are 1.2 MB, which is pretty close to 0. You're fine. Page-outs are only an issue when they're a high fraction compared to page-ins.

VM size actually seems a bit small... I'm at 50GB on my MacBook Air.
Page ins doesn't really mean anything, it's the outs you want to avoid.

I was kind of hoping that something someone found in that image would explain the constant fan noise. It seems like since I've upgraded to 10.5.5 it's on more than normal.

Memory usage doesn't affect fans, cpu usage does. Also, you're only showing your processes. Set it to show everything to get a complete view of your system.

Your RAM consumption looks perfectly fine.

VLC is using up 50% of your CPU. That can definitely cause your fans to ramp up.
