How do I find out when a mac was last shut down or restarted? System Profiler? or ?

The last command in the Terminal will do that for you.

Launch Console in /Applications/Utilities, highlight the All Messages log in the Log listing and then run a search for either reboot or shutdown in the Filter field and you should find when you last shutdown. From there you should be able to see when the Mac was next restarted.

uptime (in a terminal) also works with a little math and avoids the voluminous output of last.

another way to avoid the huge output of last is to type in the number of entries you'd like to see... e.g. type in "last -10" for the last 10 entries.

FWIW, uptime doesn't show shutdown times (obviously).
