Is there a way to make the dock make a menu list of everything in the applicatoin folder?

Drag the Applications folder into the Dock to the right of the vertical separator line.

...and then right-click or control-click or click-and-hold on the icon to get the list to pop up.

You may find this to be a more functional alternative to dragging your entire application folder in there.
