iPod won't output both L+R channels - why?

When I hooked up my 3rd generation iPod to my computer speakers at work - only one channel played.

At home when I hooked up the same iPod via a cable that has a single headphone out and two RCA outputs at the other end - and hooked it up into my stereo - again only one channel.

I used that same cable with the iPod stand and still get only one channel.

And yet using any number of headphones it's always both channels.

Any idea what the problem is?
