check www.versiontracker.com/macosx
there is a little app called bootX that apparently lets you take OSX, add apps and create a disc image which can then be burned to make a bootable OSX volume. i haven't tried it, but it's a place to start....

As far as I know, it's not on VersionTracker. Shouldn't be, since I never uploaded it there...
The program has some obvious bugs and design flaws. And the CD it makes probably won't do everything you want it to do. This is a quick and dirty, version 0.1 program, and right now it shows. It will, however, make you a boot CD image, unless of course you have one of the new 10.1 CD's that named "Mac OS X Update CD" instead of "Mac OS X Install CD", in which case you'll have to send me an e-mail so I can give you a special version that looks for the CD with the right name (yes, I hard-coded it. Yes, I know that's not good. Unfortunately, I don't have enough time to fix this program right now).
