It was only a matter of time. Good to know some people still have a measure of perspective:
"Chocolate's trying to make a move from being a commodity . . . to something a little more like wine," said John Coleman, a buyer for grocer Balducci's. "That way, it's quality-driven."
But he cautioned not to overthink it. After all, chocolate is still first and foremost a comfort food.
"You don't want it to get too mystified by all the terms and everything," Coleman said. "You taste it. Do you like it? Good."

Well, as someone who grew up in Switzerland, where fine chocolate is omnipresent, I have always hoped that the U.S. would grow up and move past that sweetened wax that Hershey's passes off as chocolate.
I mean, after being in Switzerland, it makes Godiva seem like crap (it's waxy, too). Thank goodness you can get Lindt & SprĂĽngli here, and that Trader Joe's carries Scharffen Berger. (Though till this article, I didn't know that the latter has been bought out by Hershey's. )

I like the texture of American chocolate. This must be one of those things You Europeans(tm) will just never get, like cowboy hats and Freedom.

Wouldn't 'starbucksification' be a better word than 'starbucksization'?
