Apparently, the built-in gimp printing conflicts with Epson printer drivers for their large format printers. Epson is aware of the problem, but does not have a fix.
As gimp is a Unix thang, is there a way to disable it? Or at least write a startup script so it doesn't load?

GIMP-Print is just a collection of open source print drivers. The underlying printer utility in OS X is CUPS, which is able to use GIMP printer drivers if the are present.
Just set up your Epson printers with whatever drivers you want to use, or can find that work.
You may in fact want to install the open source version of GIMP-Print for OS X as it has a lot of Epson drivers for printers "not supported" on Epson's web site.

No, that specifically doesn't work with the large format Epson printers. Those printers are supported in OS X anyway.
GIMP-print doesn't currently support any form of color management, so getting decent color output from Epson printers is a bit of a challenge using GIMP-print drivers.

For everything GIMP-print and OS X see:
http://gimp-print.sourceforge.net/MacOSX.php3
including how to disable it.
You might also want to read page 15-18 of the manual:
http://gimp-print.sourceforge.net/users-guide.pdf
For the color settings tools. Perhaps you are confusing the GIMP which does not have full CMYK color channels with GIMP-print which does.

OS X and Gimp Print is the problem, not Epson... Gimp Print is just not ready for prime Time. It may be alright for basic printing tasks, but for fine art printing, specifically with Wide Format printers, it's just crap!

Why wouldn't Epson be the problem if all other printers run fine together with OS X and the Gimp drivers?

gimp-print drivers are installed with Panther but you don't have to use them.

I disagree. Epson makes the printer but they do not, yet, make the driver for Mac OS X that supports all the features. Read what Epson has to say if you don't believe me. http://tinyurl.com/mvbr
Sure you can blame Gimp-print... but what would be the point? The Gimp-print people do NOT make the printers. Thye do not have all the specs. They do the best they can with the support they get from the manufacturers.
As far as Epson is concerned it appears that one must print from Classic mode and use their Classic version of the drivers.
