1. Is there anyway to remove the menubar shadow aside from WindowShadeX?
2. What is a good alternative to iTunes that has a skinnable interface. Or does anyone know if there is a Winamp for OS X?
3. Is there any way to change menu font sizes?
4. Is there anyway to skin the background of the dock?

Deskshade will remove the menu bar shadow, along with some other nifty features.
The only thing I know of that will change menu font sizes is using the combination of Silk and a larger font.
Skinning the dock is virtually unheard of anymore, beyond making it a color or transparent. You can do that with ClearDock.

I'm using a Konfabulator widget called guiShade to remove the menubar dropshadow.

You can also try TransparentDock. Very handy little app.
There ARE utilities around for skinning your dock, but I can't recommend one because I never used one. I remember one which allows your dock to be filled with water, or grass, or fire, etc. Not my style, but may work for you.

That program no longer works, it only worked in Jaguar.
