During the xmas holidays I was the architect of an extra feast for a few of my friends. I spent a pile of cash on cheese for a themed, sharing feast. I baked three Camemberts, a Brie, a Reblochon and a couple of other soft cheeses in various ways. We did a dish with Halloumi and Pomegranate, some mushrooms stuffed with Stilton and Walnut, a loaf of bread with more soft cheese inserted in it and a Butternut Squash hollowed out and filled with Gruyere and cream, then baked with the lid back on.
To go with it we had the usual crackers and fruit but a huge dish of roast potatoes and other veg, pigs in blankets, roast mushrooms and some garlic bread.

It was glorious. I encourage all cheese lovers to emulate this feast.
I have plenty of more important things to do, if only I could bring myself to do them....

I generally don't eat cheese and when I do, it is one slice of American cheese on a sandwich or whatever cheese goes with my McDonald's quarter pounder.

Sadly, the gourmand members have mostly flown the coop for the books of face.

Blue cheese is superb. Especially with Walnuts in a stuffed mushroom.
I also like it in burgers.
I have plenty of more important things to do, if only I could bring myself to do them....

That all sounds divine. The mushrooms stuffed with Stilton sounds especially delicious. Pitted dates stuffed with a nice blue cheese and lightly broiled is a favorite here in my house.

Brie. Seven minutes at 180°C, topped with a warm mix of chopped roasted pistachios, chopped figs, honey and a pinch of salt. Delicious and an idiot (me) can do it.

Whenever I see one of those recipe videos from Tasty on Facebook I lament their poor excuse for "cheese".
I have plenty of more important things to do, if only I could bring myself to do them....

Wow, I've watched a few of their videos also. They look tasty, but I don't see why every single dish they make has cheese, and lots of it.

I'm fine with using lots of cheese. Just use real, decent cheese.

I don't want an inch thick layer of cheese on my pizza, yet they all seem to think "light on the cheese means "practically no cheese". Asking for 50% cheese also results in almost no cheese. All or nothing.

So I don't often eat takeaway pizza.

Took me forever to find the cheat code for plain fried rice. Ask for that and you get vegetable fried rice. For the curious, it’s “fried rice with only egg and green onions”.

We have a lot of artisanal pizza places still popping up everywhere. You don't have any with a wood-fired oven and sourdough bases?

I'm mad about one with wild mushrooms, mozzarella, mascarpone, parmesan, fresh thyme and truffle oil.

We have a fair amount, but not many deliver.

Unsurprisingly, the market here is dominated by “Chicago style” pizza, which with rare exception sucks donkey balls. No idea why it’s a thing.

Most varieties of fried rice are: rice, vegetables, and meat, with the meat being a variable. So, you want fried rice + meat, or fried rice plain? then you still get the vegetables. They have a big pot of fried rice/vegetables in the back, and only add the meat when it's asked for.

Fried rice with just egg and green onions is some other dish, one that is lacking, I'd imagine.

I don't hate deep dish pizza. My only reference however is Uno's.

Ugh! I remember they had that crap in Boston making us look bad.

Have you ever had T. Anthony’s? They may have changed, but I remember that being a proper (i.e. New York Style) pizza. I note them because they were 20 feet from my dorm.

With fried rice, here at least...

1) The big pot is just plain rice. They add other ingredients as needed.

2) If you order, say, beef fried rice, the vegetables they add are green onions, and maybe some peas and carrots.

3) If you order vegetable fried rice, they’ll put in whatever vegetables they have on hand. Peapods, some sort of Chinese zucchini, extra carrots, watercress, sprouts, bitter green Nº 5... it’s just whatever.

I finally saw “fried rice with egg and green onions” at a place in Chinatown, and it’s exactly what I want. Plain fried rice. Fried rice without the meat, and no extra vegetables as a substitute.
