To prevent my colleague, studio administrator, from remotely checking up on me, my computer, from his home? Is it enough to trash the OSXvnc?

That will stop them using VNC to check up on you (unless there's more than one copy of it). You should also make sure that Remote Desktop is disabled in System Preferences (Sharing), as it includes a VNC service.

To be complete, you should also remove the OSXvnc startup item (/Library/Startup...)

If she is using a router at home they wouldn't be able to do this. NAT will stop it.

What exactly is she doing to "check in on you"? You might want to disable ssh as well since you can run top and see what applications are running as well.

One thing to keep in mind is that if the computer is provided by the school, it may be part of the agreement that you have to agree to that they can check up on you to make sure you're using it for the purposes they intended it for.

If this is not the case, then yes, a good firewall is what you want.
