These are the options for the camcorder: IEEE 1394, S-Video, Component. These are not options on the Macbook Pro, so I'm curious how I can convert those three into either Firewire 400 or 800 on my MBP.

IEEE 1394 is Firewire. You may need an adapter or a cable with a mini Firewire connection on it in order to connect your camera.

But IEEE 1394 isn't on the MBP, or am I just way too blind to figure that one out?!?

IEEE 1394 is just another name for Firewire. It's the same thing. You just need the appropriate cable to connect the two.

The camera probably has 4 pin Firewire while the MacBook Pro has 6 pin IEEE 1394.
Buy a 4 pin to 6 pin cable like this.
Firewire and IEEE 1394 and i.Link and SB1394 are just different names for the same standard.
