Which one would fit in a pocket better? Also does the incase provide enough protection? I know neither case is out yet, but someone may have experience with the 3g/3gs version.

The Commuter is very similar in size to the iFrogz case I have my 3Gs in-it fits fine in a pocket. The Incase Snapcase looks flimsier.
Frankly, for what either of those does, I'd still go with an iFrogz slip case. If I was going with Otterbox, I'd go whole hog and get the waterproof case.

can't fit the otterbox defender in my pocket, and I believe it's only water resistant.

At that size, the otterbox defender should be bulletproof.

Correct. I believe pelican makes some of the only waterproof case for iPhones.
