any -r media (dvd-r, cd-r) has a maximum limit of size; BUT, putting audio/video on such a disk has step before: compression.
audio cd have a defined compression (16bit, 44,1KHz, which results into a datastream of…… something/s); but, using mp3, you can compress much, much more onto a cd-r…
iDVD is a consumer product; it is meant to work even for people, never ever heard of compression. so, it has a limitation of 60 (high) or 120min (lower quality).
but, of course, using other, more elaborated compressors, you can "press" much more onto a disk.
e.g. you've heard of roxio's popcorn or a tool called DVD2OneX… they offer "stronger" compression, to make hours of material fit onto any 4,7Gb dvd-r……………
