Whenever I rotate it to landscape mode and I'm listening to music, I get the coverflow look, but I have no access to volume / forward or reverse.

Am I supposed to have that functionality when I'm in coverflow or am I just really stupid? Is it not there? That would be odd to have apple make a mistake like that.
Backups are like guns and condoms. It's better to have it and not need it than to need it and not have it.

Nope, no volume control in coverflow. There's a pause-play button but if you want to control volume switch back to the other mode.

The bigger mistake was apple not putting physical volume controls on the touch in the first place.

True, but least you can flick the other iPods off hold and place your finger anywhere on the dial to change the volume while it's still in your pocket. On the touch you need to put your finger on the dot to change the volume. A bit harder to find when it's in the pocket.

That's a poor excuse plus they are already on the iPhone.
