I watched the Apple guide and it mentions you can open Word documents that come as email attachments.

Can you save the document to your phone?
Can you bluetooth a Word document to the phone?

Also does the iPhone support different languages out of the box? If the Word document contains both English and Thai will the Thai show up on the iPhone?

No; BlueTooth on the iPhone is for mono headsets only.

This is an example where unofficial third party software has made the iPhone a better device.

I just hope these kind of software will make it officially to those of us not willing to hack out phones.

What I've been doing since I got mine is just emailing documents to myself, then storing them in a special "Documents" folder within Mail. It's not ultra convenient but it works fine. Downloading them via Wifi is faster then bluetooth, too.

That doesn't help if we're talking about sharing documents between an iphone and another bluetooth device that doesn't have email, of course.
