I play Europa Universalis 2 and Age of Mythology, and the dock shows up while I play. It can be rather distracting. Is there any way to get around this and prevent it from happening? Thanks!

Have you tried hiding the Dock under the Dock System Preferences yet?

Long shot here: on some games if you play in windowed mode with the windowed resolution set to desktop res, you can basically end up with a full screen window, with the dock and menu bar visible.
Unlikely, because you usually have to muck about in the prefs file to achieve this.
