I find 4.1 to be somewhat slower than 3.1.x on my 3G but not so much that my heart sinks every time I need to use my phone for something, which 4.0 made me feel!

I upgraded to 4.1 GM on my 3G today too and so far it's much more responsive. My phone was even worse than the one in the video parody before today. I can't say what 4.1 is like compared to 3.1.x...

I don't think you're missing anything. As far as I know it's not possible to sort bookmarks automatically in Safari. Maybe there's an add-on that will do this for you but why they don't include it...
