I've been using a Samsung 5400RPM 120GB drive in my MacBook for about two weeks and everything is fine so far. Heat and noise don't seem to be any higher than the stock 60GB.

Definitely keep them in case you ever have to send your computer in for repairs. I have seen several people who have had problems blamed by AppleCare on third-party upgrades like RAM and hard drives.

I got mine today; new heatsink, bezel, and top case. Looks like I'm having the same trackpad issues as mac_cap, only it's the left side that's squishy for me.

Drives come in 4200, 5400, 7200, 10000, and 15000 RPM. 2.5" drives made for notebooks only go up to 7200 RPM right now, and probably won't ever be higher the the near future due to heat and power...
