How do I start over with Panther?

I decided to sell my G3 B&W and I have panther installed. How do I start over fresh for the new owner with all my info gone (back to that "welcome" screen like when you buy a new mac)? I just bought the machine clean yesterday....it had 10.0 on it....I used the upgrade cd to get it to 10.1....from there i used my 10.3 upgrade cd to get it to panther.

ONCE YOU HAVE EVERYTHING BACKED UP and transferred to your new machine,
Insert the Panther Install CD 1.
Double-click the installer; the machine will restart from the CD.
Follow instructions until you see the install options at lower left, where you can select
Update install
Archive and install
Clean install with format.
You want to format the hard disk and do a clean install.
This erases *ALL* data and other files from the hard drive, leaving it completely empty before the new system is installed.

Would that method secure-delete the files? If not, how would you go about wiping a machine securely?

Probably by restarting it in Target Disk Mode (hold "T" key down on startup) and hooking it up to the new Mac, then secure-deleting the entire contents of your old user folder and probably of /Library as well.
Then you can re-install Panther either from the new machine (since they're hooked up anyway, and the old machine is in target disk mode already), or by re-booting the old machine from the Panther Install CD.

If you're panicking, you can do this (use the CD):
1. Launch Disk Utility (it's on the Mac OS X Installer CD.)
2. Click on the main HD. Not the partition that's indented, but the whole thing.
3. Choose the Erase tab.
4. Choose Options and select Zero All Data. Click OK in the Options sheet.
5. Click Erase.
Now install Panther.

A potential problem with this approach is that the Panther *Upgrade* (as opposed to the full version) checks for a previously installed OS X.
I don't know if completely zeroing the disk might keep the Upgrade from installing.
In that case, you'd have to start over by installing/restoring a previous version of OS X first.
Time consuming.
