i am comfortable plugging everything else into my pbook when i put it on the desk still running (power supply, usb, and speakers), but I get the feeling i shouldn't plug in my DVI (to VGA monitor via adapter) while it's running.

Am I right, or am I paranoid from the past and now able to just plug it in and have use of my second monitor on the fly?

You are being paranoid. Just plug it in whenever you want.

i use the mini-dvi to s-video adaptor a lot and i hot swap it all the time

I hot plug my DVI connector all the time, DVI allows for this, as did VGA.

When I do hot plug it, I see the desktop fade to blue twice while it enables the second monitor.
