Well, you can use the included AppleScript to do timed recordings... and some people have come up with apps that do it better as well, such as Streamers.app:

This app is terrific Moki, only problem I have is that it records system sounds and volume changes...kinda sucks to be recording and get an e-mail beep at the same time, or to have to turn everything off before recording.
It is better than nothing or paying for it though (yeah, I'm cheap...I am a dad). Anyway, you guys do good work, thanks for the free app.
