What UPS would I need to power a Mac Pro 8-core and 2 23" ACDs? I bought the APC 650 but it gets overloaded with both displays plugged in. Even if it just has the Mac Pro connected, it gets overloaded when the computer is using all 8 cores.

I don't really mind how much I need to spend as there have been a lot of powercuts where I live as of recent and losing work is awful!

apc.com has a handy sizer which says you need 1300VA for a dual quad with a pair of LCDs (minimum 20% expansion margin/20 min runtime).
