HDMI offers 1080p support, component only goes to 1080i. THere are other differences, but that's the most significant.

Component is video only.

HDMI provides video, audio as well as the encryption/compression used for the new HD DVD formats. I don't know the intricate details (signaling, protocols etc), so I can't say how much difference it will make if you only have video going to your CRT/LCD/Plasma etc... Other than starman's info on 1080P vs 1080i.

HDMI is a cable that handles digital info, not analog.

If you have a choice, HDMI should give you better picture quality because the signal passes unaltered. Component connections to a digital HD TV for instance require the signal to be converted to analog on the sending end and reconverted to digital on the receiving end. HDMI also can pass 8 channels of uncompressed audio.

There are two major differences:

1) HDMI carries digital signals, similar to DVI. Component video carries analog signals. The picture quality is therefore somewhat higher.
2) HDMI carries both audio and video, while Component carries only video.
