Can Fetch see which files have to be uploaded in binary mode, and which have to be uploaded in ASCII mode?

In the drop-down menu for the upload mode I could find the binary mode (RAW data), but I couldn't find ASCII.

Thanks.

If binary is off, it's presumed to be ascii mode. Binary is enabled (or 'auto' turned off) if you need binary or have had issues with default/ascii.

So if "automatic" is on, Fetch automatically recognizes which files should be uploaded in binary mode and which in ascii mode?

In short: don't worry, just upload?

Yes, unless you have problems in auto.

Although if you have SFTP available to you as an option, use it instead, because every time you authenticate using regular FTP you are sending your password in the clear as plain text.
