Google Apps Mail is driving me nuts!

I put in the google Apps recommended settings in Apple Mail, turned IMAP on, auto-expunge on.

What happens:

I have messages in my Inbox, but there's a second Inbox that Google Apps opened on my computer, called "All Mail". There is another copy of all email there, including the deleted ones (thousands of emails on my computer).

How can I:

1. Have all emails only once (in my Inbox), and not in this "All Mail" Inbox (Google Apps opened 18 mailboxes on my computer, six per address)

2. Have all the messages stored at the Google Apps server? There are no messages in my google Apps online inbox, they are all on my computer.

I once deleted all the thousands of emails in the "All Mail" imap mailbox on my computer. Next day, they were all there again. I have no idea where they came from. I can't see a single one on my google apps inbox.
