Well it's oddly behaving Mac season again. This time a trash can Mac Pro. Fitted with a 4TB SSD (from OWC so it's an oddball drive made from 2 RAIDED 2TB SSD's which makes installing the OS "interesting" as macOS installers won't instal onto RAIDed drives any more) and 128GB RAM

Any hooo. Machine itself appears to be shutting down over night and requires a reboot in the morning. Also it seems to forget the boot drive and unless holding the alt key down to select the drive will revert to a flashing "no system" icon.
Managed to get a crash dump out of it. Hard drive issue?

So it has Catalina, which by default splits off a separate system volume. In an APFS container, within a RAID0 SSD.

Too much abstraction - I'd simplify to troubleshoot. The trash can will boot back to Mavericks. There have also been some firmware updates along the way, such as for APFS booting.

If you've got an alternate SSD, try it by installing High Sierra. Assuming that works, try the alt SSD with Catalina. If problems appear, narrow down which OS is giving trouble. You might have to install each OS in turn, starting with Sierra perhaps (when APFS first started appearing). To catch the firmware updates.

I've never owned an OWC SSD - can you split it into 2x volumes? Or does the drive hardware conceal the internal RAID, presenting a single 4TB drive to the MacPro? Splitting it into two regular volumes would let you narrow down if the OWC SSD is trippy, or if it's only the RAID implementation + Catalina that's the problem.

Some good ideas.
Originally I swapped out the OWC SSD for an Apple on in order to update the trashcan to High Sierra, which should have installed the APFS boot updates as well. I reinstalled the OWC drive and erased it and then had to get Catalina on by cloning a Cat drive since the Apple installer won't install onto a RAID drive anymore. Once the OS was on it was happy to download the newest Catalina updates and instal them so I assume its firmware is current.
I'm monitoring it to see what I get as the next crash report and will compare the two to see if anything looks recurring.

Interestingly looking at the system profiler it shows the two containers both as 3.84TB (Mac SSD and Mac SSD Data) but also shows the details as:
