in the iTunes library of videos is it possible to create folders and place the videos in folders then see the several folders with their contents in grid format?

is there also a pre pane that you can tell iTunes to start all vids at the begining and also make iPod Tounch v1 do the same?

No.

But you can create playlists (including intelligent playlists) to do this.

Get Info on all of them (select them all, then Cmd-i) and then under "Options" check and then UNcheck "remember playback position".
