I have a 2.16 C2D iMac with the 128MB X1600 currently (20"). I use Aperture a lot on it but I'd like to maybe add a second 17" LCD. Would that be doable, or what that slow down Aperture to the point of being unusable ?

Nope, that would be fine. It'll certainly make using Aperture much more productive, since Aperture has very nice layout settings for taking advantage of multiple monitors.
