Which one should I get?
Is it really worth the $500 difference?

1) If you're gonna use the DVD burning features
2) If you think the ambient light sensor is cool
3) If you're gonna need the built-in Airport Extreme
then I'd say the $600 $2599-1999=$600
is worth it.

Yeah sorry, $600. But I think DVD burning is needed, the light sensor is cool but I never used it on my 17" that I had. And I don't need the extra speed of Airport Extreme, but I do need Airport.
Do you guys think that the 1.25 chip and the 1.0 will have a noticable difference?

Well, you're talking 25%...
Eg, filters taking 45 secs instead of 1 min.
(But they both suck against a G5 1.2 which is what the new 'Books should have been! Sorry! The AppleInsider speculation had got me convinced now was the right time. Maybe in 6 months.)

Okay, just ordered a 1.0GHz 15" w/ a 20GB iPod and a HP Printer.
Decided that all that extras isn't really necessary.

Whoa, sweet deal man...did you not own a 17" PB before? Wow, these new 12" and 15" AlBooks are so tempting...even a DVI-out on the 12"!

Yeah, and I realized that I turned off the ambient sensors when I had the 17". I would've probably picked up a 1.25 if I could've taken out the keyboard. Oh wells.
Also, it was listed as sameday shipping.

Well, almost. It's not quite as nice as your example shows - on the 1.25GHz machine it'd take 48 seconds assuming all other factors to be equal (which they likely are not)
Either way, I want a new one! I know my current 17" should do me well for a good time yet, but I can't help but lust after something more sensibly sized. That 12" would be lovely, now that it's got the DVI port.
Does anyone know if the 12" has Level 3 cache? I fear it hasn't.

The L3 cache on American PB's has been totally removed. There's some conflicts as the UK pages say their PBs come w/ L3 cache, but the US page omits it.

When configured identically the 1.25 GHz is a better value. $57 more gives you 25% faster processor. I predict Apple will make it impossible to dowgrade the hard drive and SuperDrive in the 1.25 GHz model in the near future.

Wow, very nice point...for those not in need of a SuperDrive, this is easily the best config. Definitely more bang for your buck, I can't believe Apple allows these downgrades.

This is what I did for my Ghz Ti. I dropped the SD and also bought from AppleEdu during the double your RAM for $40 promotion. That gave me a maxed-out high end for about the same as a similarly configured low-end model.
The only dif? SD! Oh, and the low-end only had 32 Mb video mem.
