I am looking to open a craft beer bar and need to get all of my thoughts on "paper" in a more cohesive manner than they are now (random notes and cognitive memory). Are there any recommendations for apps on the iPad for this reason? If not on the iPad, then OS X or Windows will do. The reason I ask for an app is that I have my phone or iPad with me 99% of the time while I do not have my MBP with me.
I like my water with hops, malt, hops, yeast, and hops.

I don't use it, but everybody always says that Evernote is amazing for this.

Evernote all the way. Used in conjunction with Drafts for super quick notes and you'll be good to go.

I was going to ask you if you could use something not specifically directed at business plans so I could suggest Evernote.

I'm another person in the "non-user, but everybody tells me it's great" category.

The thing I found extremely useful in Evernote is that you can create documents in it, not just upload existing documents, and access them from any device you're logged into Evernote with. I think it works very well for a lot of things, and keeping your plans (business, party, etc.) in one spot that you can always get to makes updates and reference trivial.
