Hello, I have a question is there a way to prevent the formatting of a copied piece of text to notes ? For example when I copy from a website, or something like that.

If by notes you mean the Stickies app:
Edit > Paste and Match Style
or
Command + Shift + Option + V
|

Oh, I see there is this app 'Notes' in OS X 10.8. I guess the trick above might work as long as Notes supports System Services. I am running Lion on my end so I can't check it out. Sorry.

What about pasting into a text editor first, then copying and pasting into Notes?

Pasting stuff copied from Notes is a PITA too.
