Funny you should ask that....

There is a company that makes a USB thermometer/hygrometer. You can capture this data from a simple command line app. From there, it is infinitely flexible. I have a PHP shell script (yes, PHP shell script) that runs every minute, polling for all of the data I want, then inserting it into a MySQL database. Then whenever you load the web page, I can grab the newest data as the 'current' data, and then I can do any number of other interesting statistical things with a few good database queries. I also use jQuery to make the temperature values on the page update in real time without reloading the page (in real time means every 30 seconds or so I believe).

Last winter, this setup worked great. This year, this old Mac has been crashing every few weeks. I'd love to replace it with an old Mac mini. No battery, but a much better form factor for the task at hand.

Small world - I just was looking for the same and ended up with this:

Weewx - Linux weather software

I use it with a Davis VantagePro2 and it works great on OS X. It only works with a few higher end weather stations, but it's based on:

wview - Linux/FreeBSD/Unix/Mac OSX Weather Station Software

Which supports tons of weather stations, even cheapo ones. I haven't tried that latter, but the site says it works on OS X.
