Is there an application that will capture print jobs sent to a USB or network printer and save them to disk as a postscript or PDF file?

I have a situation where someone is printing files to my office that need to be stored on a computer. Now, the printed files have to be scanned and stored as a picture. It would be nice to just intercept the print jobs and save them as a PDF instead of taking the extra time, paper, and disk space of scanning stuff that was just printed.

In the Print sheet, i.e the sheet that appears when you select Print in any application under Mac OS X, click "Save as PDF." You can then specify the file name and location where the PDF should be saved.
