I'm interested is setting up a camera (already got one with USB connection) to do either a web cam for our web site or a simple video conference type meeting with a colleague in another country. Does anyone know of a Mac compatible (OS 8.6 - 9.1) software for doing this... + will it have implications on our internet server?

if you want to do cross-platform video conferencing, ivisit might be a good program to check out. as far as setting up a webcam goes, you could try one of these programs from versiontracker.
i doubt using any of these programs would seriously impede your internet server's performance, but that's a guess on my part.

For conferencing, ClearPhone work quite well, esp. if you have a high-speed connection. I've used in the past for international calls. ... And they now have a freeware version.

If you want to just post a photo to a web page, Oculus is good. (OS X version available as well.)
