I've got the ogmtools to use with the cli, but the manual is confusing, could anyone offer me help extracting the video and audio out of a .ogm file?

It should be just to drag 'ogmdemux' onto a terminal window, enter a space and then drag your omg file you want demuxed onto the same terminal window. Then press enter and it should output the audio and video streams to your home directory.

Feel free, I've played around quite a bit with ogmtools. You can also check out the Ogg Vorbis QT Component if you want to try putting the audio/video into a Quicktime file.

I've installed that, too. It seems Pro won't let me import / open thr ogm file, though. Do I have to restsrt after doing so?
Another, I'm running 10.2.8, and I wanted to run ffmpeg, but when I try to install the binaries, it tells me I have the wrong password. What's up with that? Hmm.

The Ogg QT Component only imports Ogg Vorbis audio (.ogg), not ogm which usually contains both audio and video. Usually an ogm file is Ogg audio with Xvid/DivX video, so after using ogmdemux you open the avi file and the ogg file in QT Pro and add the video to the audio.
For ffmpeg I use ffmpegX. The application itself is shareware, but you can control-click and view packet contents and get access to ffmpeg (and other stuff in there).
You can also get mencoder OS X for completions sake.
