Is it possible to create a link or alias in pages or keynote that, when pressed, will launch an application?

Only if the app has a URL scheme it recognizes. For instance, Bodega recognizes and opens URIs starting with bodega://

I don't think there's any option to set a button or link to open an app in iWork docs. Could be wrong though.
