Well, you can try using phong's ePlastic tutorial. It's quite similar to Apple's plastic look.

I have played around with the "Aqua" look a bit. I have compiled a photoshop doc with all the techniques I was able to find to create the "Aqua" look. You should be able to learn from the techniques to create your own buttons or whatever. Here is a link to a photoshop file that contains several layers and effects:
http://homepage.mac.com/cardinale/FileSharing.html
FYI - The font that Apple uses to create Aqua is Lucida Sans(I think.)

Hi,
If you have MacOS X PB, you can download a REALbasic 3 Demo (realsoftware.com). You can draw buttons (with your own text on them) and other interface elements easily (checkboxes, sliders, etc). Then, just capture the screen. Use the captured image in your image editing program and "cut" the elements you want.
BTW, REALbasic is not as difficult as it seems.
Good luck
Bartman,

Good news: there is a GREAT little application called "Liquid Button Maker" that simplifies this process. You type in your text, choose a color and size, and it renders an Aqua button to your liking.
http://www.d6.dion.ne.jp/~h-shio/html/soft.html
Bad news: It's in Japanese.
OK news: It's not too difficult to figure out, even with the foreign text. Just play around and you'll see which button/field does what. Works for me!

I'm impressed with both the NeoFrog tutorials and PlanetPhotoshop.com. Thanks to everyone who replyed, I'm now able to create 'Aqua' or 'Plastic' images.

Here are 2 tutorials for making aqua objects (they're much better than the others):
Aqua (Easy)
Aqua (Pro)
Thanks to phong for the info.

Well of course. Any computer newbie can use Mac Photoshop, where on the other hand it takes a PC pro to do the same thing.
Just look at me I'm a 16 year old web designer happily working for a local web company.
I just love Macromedia

Anyone know of a source for a Mac OS 8/9 version of Apple's Lucida Grande font used in Mac OS X?
