I have a computer at work and I don't want it to update my iPod. How do I set it to not update automatically?

Connect your iPod when iTunes opens select your iPod on the left window under source. Then click the iPod icon on the bottom right of the iTunes window (far left icon) it will bring up the iPod preferences window, select "manually manage songs and playlists".

Will it not update before I get finished with these steps? I don't want it to erase my iPod.

It won't. Because Apple is smart enough to know that people are gonna do this, and so it asks you if you want to nuke all your songs or not.
