sudo defaults write /System/Library/LaunchDaemons/com.apple.WindowServer 'EnvironmentVariables' -dict 'CI_NO_BACKGROUND_IMAGE' 0
Replace "0" with "1" and you'll get pure white and ".5" will give you a lighter grey.

Enjoy!

Edit: You must reboot after. Even killing the WindowServer doesn't work.

Do you have to reboot afterward? I restarted Finder, but it didn't do anything. I can't reboot right now to try it bc I'm in the middle of a download.

Yes, you have to reboot. Just do it when you're done... no rush.

I stopped the download and rebooted... Sweet sugar coated jesus that is so much better, thank you!
