Using Word:Mac 2008, embedded links come through just fine when printed as PDF. I noticed that I had to manually add the "http: //" part when the URL didn't start with "www," as in "forums.macnn.com." But when opened with Adobe Reader or Preview, the links worked just fine.

Just tried it in Word 2011 (Beta 5). No problems here using the Save As menu item or by printing to PDF. Can you tell us how you're creating the PDF?
And when you say embedded links, you do mean hyperlinks, right? Or is it some other kind of link (say, linking to a file on disk)?
