Hi,
I've looked around here and I can't find any mention of fink yet working under panther. So, I figured I'd just give it a whirl, but that didn't work.
Does the current fink (0.5.3 I think) work with Panther, and if so any links for help installing it?
Thanks!

No, only fink-0.6 works with Panther. But there is no binary distribution available (they are working on it) so you would have to bootstrap it (compile the source). But it is very easy, just download fink-0.6 and have a look into the documentation.
Here an example of Gimp an Panther: http://larsi.macbay.de/gimp.jpg

Unfortunately the inject.pl gives me errors when bootstrapping, and things such as irssi-ssl don't compile for me.

But it seems to be full of problems.
